Imported since the Middle Ages from northern European countries, salt-preserved cod became a key ingredient in regions where meat was expensive or unaffordable. <\/p><p><strong>Lean Fridays<\/strong> and <strong>Lent<\/strong> imposed abstinence from meat, and cod, thanks to its long shelf life and affordable price, entered the pantries of the people on a stable basis.
